I was recently asked about how I fill my jars with my current setup, so let’s go through the process and see what it takes to make and seal a jar of hot sauce.
Step one, of course, is to get your ingredients cooked down and well blended. In this video I’m making Chi-Chee, my kimchi hot sauce, and it's one of my favorites to snack with.
This sauce is right at home in some ramen, good for smoked salmon and cream cheese on a bagel, and makes some pretty incredible wings too.
So now that the sauce is ready to bottle, I’m going to check that the temperature is high enough for filling. The sauce has to cook to at least 200F, and be sealed no lower than 185F.
Once in its sanitized jar, I close it with a sanitized button lid and invert it. The hot sauce will soften the inner lining on the lid and create a hermetic seal.
Just be careful, this sauce is near boiling and will bite you if given the chance!
As the jar cools, the air in the headspace will contract and sink the button so you know it has not been tampered with since it was manufactured.
When they’re cool enough to handle, it’s time to date code and label each jar. I know there are machines that can do this faster and perfectly every time, but ya boy ain’t there yet.
This is what it looks like and what it means when I say every jar is hand made. Every single sauce is made with individual attention and care.
