I want to introduce the mildest sauce in my lineup, Totec’s Tears. This is an Aztec inspired flavor made with dried chilis like guajillo, ancho, and pasilla, as well as some sweet plums. This sauce makes for an excellent base for a barbecue chicken pizza, goes great with fried eggs and hash browns in the morning, or is excellent with sour cream on a baked potato, and so much more.

 



The idea was based on a chile colorado recipe I really enjoyed and I wondered if I could adapt into a hot sauce.

I chose guajillos for their fruitiness, tasting kind of like if peppers were a fruit leather, anchos for a natural smokiness over the delicious but sometimes polarizing chipotle, and pasilla for their raisiny sweetness. The real magic came one night when I was brainstorming the recipe while my roommate was doing the dishes. I couldn’t figure out what the missing piece was until he blurted out ‘PUT A PLUM IN IT’. And so I did!

It has since taken multiple awards over the years and serves as an excellent primer for those who don’t like a lot of spice!

The mix of rich dried chilis and earthy spices like cumin, coriander, and oregano offer a warm and deep flavor that is balanced with the acidity of orange juice and rice vinegar as well as the sweetness of the plums to offset the chili’s natural astringency. Originally I wanted to go down a mole path, but decided against it to keep my lineup free of major allergens like nuts.

This sauce quickly became a fan favorite by being easy to eat morning, noon, or night. I plan on making an extra hot version down the line of this and the rest of my sauces, but have to wait until I can get fresh super hot chilis like ghost, reaper, and scorpions in bulk from a farmer later this year.
