Let’s make a 15 minute weeknight pasta and use up some leftovers while we’re at it.
The sauce comes together in the time it takes to boil your noodles.
Today I’m using ziti because… it’s what I got, but you can use whatever you have.
When the pan is about medium-hot, add some olive oil and give it a second to come to temp.
Then go in with some shallots (or onion) and garlic and get those coated.
When fragrant and translucent, add in some quartered cherry tomatoes.
Here I’m using some lacto-fermented tomatoes I found at the farmers market (shout out to the Walnut Street Market here in Cookeville!).
Once they’ve broken down a little bit, I’m going to add my award-winning roasted red pepper hot sauce, Brimstone Rimjob.
This is going to serve as a perfect flavor base to make a simple pasta into something deeply satisfying.
Once the pasta is about ready, I’m going to throw in some cubed leftover pork chop from dinner last night to start heating through with a bit of pasta water to bring the sauce together.
Now add the noodles to finish in the pan and toss to coat. Man down.
To finish it up, kill the heat and toss in a bit of butter to give the sauce a little extra richness and cling.
Ziti is a smooth pasta and needs all the help it can get holding sauce.
Once it’s well incorporated, add in some fresh basil and give it a final toss.
Plate up with a sprinkle of grated hard cheese like parmesan, pecorino, or grana padano like I’m using, and an extra couple basil leaves if you’re feeling fancy.
A crack of black pepper would not be a bad choice either.
But there you have it, a pasta that took 15 minutes from start to finish and made leftovers into nextovers.This is also a showcase of my favorite way to use my sauces at home.
