Xipe Totec (shee-pey toh-tek), the Aztec flayed god of life, death, and rebirth, symbolizes the Earth’s renewal of the seasons as life sheds its dead “skin”, and spring vegetation sprouts from seed. This unique, old-world inspired flavor brings together dried chilis, sweet plums, and earthy spices in a mild but richly flavored sauce. Use it to enhance grilled meats and vegetables, roasted and baked potatoes, chili, BBQ dishes, and fried eggs. 1/10 heat.

It’s my secret ingredient to so many things! Such a wonderfully unique flavor! Love it!
A unique take on salsa roja with smokey and fruity notes, but not overly sweet and retaining a nice acidic bite. It can really round out meaty dishes -- think beef enchiladas or a Mexican brisket -- while still cutting through the deep flavor of the beef. It's also really good paired with the "totec's tears" salsa verde if you wanna do like a New Mexican style "Christmas" preparation. Also goes super good with a friend egg over potato hash, maybe some sour cream, cilantro, and a squeeze of lime. This one's a real winner in my book and I'll definitely be getting more.
Boy, just tried Totec with Rancho Gordo Ayocote Morado beans and so good! The beans are huge and creamy with a chocolatey sauce, cooked simply with bay leaf, garlic, onion, s & p. Add some spoonfuls of Totec—they were made for each other.
Rancho Gordo has the best beans around.
